All I have is time...

Slow and easy sourdough….

It can be challenging to wait for something good , but the good is in the waiting isn't it it?

The way the flour fills the air like fairy dust, it points to something good coming soon.

The smell of yeast how it makes my mouth water and how i know that a fresh loaf will make farmer husband sigh when he sits down at his plate

for healing,

for redemption….

for life bread giving moments.

I don't know about you but I need every thing

quick,

hurried,

Lickety split.

My microwave is not fast enough, Thank goodness for the folks that invented my Instant Pot! They know my struggle and my struggle is REAL!

My lists are long, no sooner than I cross one thing off of that I have 10 more jump on ….

So who has time to wait ,

to hang around ,

to sit for spell ?

Little did I know that time is required for all good things…

to measure,

to mix,

to kneed

and yes even for good sourdough bread…

Time is of the essence .

Keys to successful sourdough

1. Strong active mother culture

a- dynamic

b-smells

c-at peak-floats on water

2.Accuracy of ingredients and temperatures

3.Mix dough properly

4.Support final rise with proper shaping and physical support

5. Bake at the right time

6. Use reliable, SIMPLE formula ( recipe )

7. Its OK to spike with commercial yeast

The method we used for our starter dough is from King Arthur flour
